Our Classic Model
We have been manufacturing MIWE
ideal multi-rack ovens since 1954.
At that time, it was one of the first hot
air circulation ovens on the international
market. It is not that long ago that
these first generation models, at first
coal-heated and later oil-heated, were
part and parcel of every bakery.
Over the years, we have continued to
improve on this time-tested oven and
today it is one of the leading multi-rack
ovens on the market.
Materials
MIWE uses only top quality materials in the manufacture of its
multi-racks. The entire outer casing the front, sides and back
as well as the loading doors are made of corrosion-proof stainless
steel. Electric shock and temperature- resistant glass doors
are also available at no extra charge.
Workmanship
Quality workmanship is just as important to us as the materials
we use. Our corrosion-proof stainless steel baking chambers
unlike the spotwelded baking chambers are fully welded so that
no steam can escape. Our heating elements are welded via a computer-programmed
laser welding machine – another example of our precision workmanship.

We at MIWE, are no exception.
Whether it is a matter of larger baking
surfaces, automatic loading, another
type of energy being more practical or
simply a more efficient baking capacity
being called for, you can be sure
that MIWE is continually testing innovative
means of baking.
After all, our oven didn't come by its
name purely by accident.
Just like the old stone ovens, the MIWE
ideal bakes with gentle heat. A belt of
hot air circulates around the outside
of the baking chamber and heating
gases circulate through the heating
elements which are separate from
the baking chamber. This time-tested
technique ensures a gentle baking
atmosphere.
The even transport of heat guarantees
quality bakery goods. As in the days
of the steam oven, MIWE bakes on
ceramic hearth slabs or your choice
of chamotte or granite hearth slabs.
The German Agricultural Association
permits bread baked in this manner
to be called stone-baked. Pretzels
taste especially good when
they are stone-baked,
and we offer special
stainless steel
hearth slabs for
this purpose at
no additional
cost.
There is always room for the MIWE
ideal in even the smallest of bakeries.
Our slimmest model, the MIWE ideal
R-Oven, is a mere 60 cm wide. By the
way, we can deliver the MIWE ideal
disassembled so that it fits through an
85 cm wide door. Our specialists
assemble the multi-racks and put
them in baking operation on your premises.
The MIWE ideal doesn't waste a centimeter
of space. It is compactly-built
and can be built-in on three sides
(the 180 cm wide MIWE ideal G is the
only exception). The MIWE ideal can
be conveniently installed in a row of
ovens without having to leave any
additional space at the back or sides.
The multi-rack is mounted on a sturdy
base so that it can be easily transported
completely assembled into
the bakery or when desired, moved
to another spot without being disassembled.
Just one more example of
our flexibility.
Heating
The complete line of MIWE ideal multideck
ovens can be heated by gas,
oil or electricity and the ovens can be
converted from one form of heating
to another upon request.
Energy-saving
The MIWE ideal is an energy-saving
oven in more ways than one.
In the first place, the multi-deck's
exhaust gas limits are considerably
lower than the limits set by the
German DIN 8722 specifications for
exhaust gases.
Moreover, heat is transferred economically from the central
boiler through well-insulated steel tubing. This large-capacity
steel tubing allows optimal circulation of the heating fluid:
91% operating efficiency. The fact that baking temperatures
increase at a rate of 3 to 4 per minute means the baking chambers
are quickly heated to the desired temperature and return to
the desired temperature after loading almost immediately.
Equipment
A mobile proofing unit right next to the oven is ideal especially
when the heat or the steam comes either direct from the oven
installation or from its own automatic temperature and steam
regulator. MIWE suggests the proofing units MIWE MGT with the
MIWE Digital Control System and the MIWE modul (see product
info). The MIWE athlet puts an end to the backbreaking work
of loading and unloading an oven by doing it fully automatically.
The entire oven surface can be loaded and unloaded in just one
simple step. Detachable conveyor belts and delivery belts make
work even more efficient (see product info MIWE athlet). Easy-to-maneuver
loading units on rollers and an easy-to-operate door handle
also simplify the task of baking.
Moreover, we've designed a special
spring hinge to alleviate the problem
of keeping the door open and thus
preventing steam from escaping and
the unnecessary loss of energy.
A MIWE specialty: the MIWE ideal can
be equipped with up to three drawer
racks.
These ovens are extremely sturdy and
their cantilevered construction without
protruding supports allows them to be
rolled out to the last millimeter so that
the entire surface can be efficiently
used. One hand does the job.
When the oven door is opened, the
stainless steel steam exhaust ventilation
system removes the steam so efficiently
that there is never the feeling
of discomfort.
Safety
MIWE ovens meet the German VDI,
VDE and DIN safety regulation standards
as well as all other current
norms. The gas-heated models also
meet the necessary construction test
certificate specifications set by the
EU Certification Board.
The Steam Apparatus
Saturated steam that enables the dough to expand evenly and
a steam apparatus that produces the correct steam quantity quickly
and is suited for continuous operation are the ideal prerequisites
for ensuring even steamintensive baking batch for batch in a
short amount of time.
Each baking chamber of the MIWE
ideal has a large-dimension, highcapacity
steam apparatus which produces
saturated wet steam. (Only in
the case of the 60 cm wide multi-deck
oven are two baking chambers supplied
by one steam apparatus.)
A steam lever and a pressure control
valve make precision programming
possible. When necessary, a proofing
unit can also be supplied with steam
through an additional built-in steam
apparatus. A pressure control valve
guarantees the safe removal of the
exhaust steam and ensures the maintenance
of a uniform pressure level.
Operation
MIWE had the baker in mind when it
designed the MIWE ideal.
A good example is the convenient loading
height of the uppermost baking
chamber. Or the height of the sturdy
corrosion-proof stainless steel workspace
onto which bread and bakery
goods can be conveniently loaded.
A further example is the smooth-running
discharging belts that make
back-breaking loading and unloading
a thing of the past.
Maintenance
Maintenance has been made easy
because everything from the boiler to
the steam injection piping to the main
driving switch, lighting and programming
and safety control are easily
accessible from the front. The heating
slabs are removed for cleaning purposes.

ovens and other technical installations
ensures longevity.

Programming
Three different types of programming analog, digital or computer
for the MIWE ideal. Three functional types of programming to
suit your needs. MIWE S Computer Programming has a clear, easy-to-read
monitor. A good example is the 99 baking programs that can be
individually programmed with up to 8 baking phases. Baking has
been simplified through the MIWE S which offers fully-automatic
programming including nightti- me settings and a statistics
program with an interface to other computer systems (see product
info). The MIWE Sis our digital control system whose numerous
features make baking a joy. The MIWE S control panel has an
easy-care protective covering with a timer that indicates the
remaining baking period, a thermostat that indicates the actual
temperature as well as a nighttime setting, seven-day setting
and automatic steam quantity setting. Upon request we will equip
the MIWE S with an steam ventilation regulator and steam quantity
setting for the proofing unit. The reliable MIWE S analog programming
is a time-tested and fullyfunctional, inexpensive alternative
to the MIWE ideal.
Oven Models and Types
and Ovens made to Specification
The MIWE ideal Dual-Circuit oven
is a versatile multi-deck oven that
should be used when a variety of
baking goods need to be baked at
different temperatures or when an
oven isn't always used to full capacity.
As is the case with our conventional
MIWE ideal, the centrally-produced
heat flows evenly through all the
baking chambers. The dual-circuit
type MIWE ideal R offers the additional
feature of being able to heat two to
three chambers in the upper or lower
oven installation at different temperatures.
While the lower oven installation
generally consists of two baking
chambers, the MIWE ideal G upper
oven installation comes equipped
with two or three baking chambers
and the MIWE ideal R comes with
three or four baking chambers.
The two-stage boiler in the MIWE
ideal dual-circuit oven uses considerably
less gas or oil when one of
the oven installations has been shut
down. The two baking chamber
installations are well-insulated to
prevent a loss of heat.
