Raff Inox. Features and productivity

The Working cycle

The Raff Inox working cycle is simple. The dough obtained with the kneading machine is laid on the rotary carriage which unloads it onto a moving mat. The mat conveys the dough into the head of the machine, where the first two rolls squash it briefly and push it towards the three main rolls. These rolls gradually complete the rolling process and again unload the dough onto the rotary carriage, ready to restart the cycle. The final thickness is thus obtained gradually, without “ill-treating” the fibres of the dough. Moreover the final product is obtained with a few sheeting cycles. The Raff rotary carriage is designed to turn the dough through 90° so that the fibres cross over at each run though the rollers. Moreover the carriage performs a further movement: it oscillates across its entire width during the dough collection process at the end of each cycle. As a result, the dough settles without forming heaps and return to the rollers evenly spread.

A computer assisted dough refiner

Each step of Raff’s production process is assisted by a PLC, which is really easy to set through a keyboard. In particular our refiner is programmable according to 3 main parameters: number of refining/laminating cycles, lamination thickness and lamination thickness decrement.

The materials

Along with the really high quality components we have chosen only the most valuable materials to build the Raff of the future: stainless steel carpentry (AISI 304) and painted steel sides. These materials grant a better resistance of the machines to the wear and tear of time, but also a bigger respect of the hygienic rules.

The fittings

Raff, integrated by a cutting trolley, can be an extremely efficient instrument in preparing the strips of dough necessary to feed forming machines such as brad-stickers machines, lines for twisted bread, machines for “Ferrarese” bread and so on. Moreover Raff is projected to receive flour spreader devices that, by eliminating sad dough adherence, make easier the refining process.

RAFF in line made to measure

Since many years Minipan experience has consented to realise automatic refining lines with a potentiality that can reach up to 3000 kg/h of refined dough. These are systems that are largely used in the industrial lines for the production of sandwich bread and slices bread. For this purpose the model Raff 2 730 has been projected to receive the dough from automatic loading devices composed of hoppers with up to 300 kg. capacity. Furthermore, thanks to the possibility to unload from the rear side, it is possible to create true refining “trains”. These “trains”, positioned in series one by one , grant a really high working quality together with extremely extraordinary productivity performances. The connection to the forming device is then granted by proper belts, projected on measure and integrable with devices for the safe-guard of the forming machines such as for example metal-detector.
