In addition to the steam unit, the gastro-version
MIWE aeromat R (with the DS control) is also provided with a
constant steam supply (on request). Meat or pudding can be also
cooked thanks to the multi-purpose steamer function. A core
(temperature probe is available as an in option).
In addition
to other advantages of the computer control MIWE CS, an efficient
standard gradient baking is integrated in the MIWE aeromat. This
patented process controls the course of temperature during partial
loading of the baking chamber. This way, constant optimum baking
results can be achieved.
The high flexibility of the MIWE
aeromat can be increased in combination with other baking ovens. For
example as a dual cycle in order to operate both ovens
simultaneously with different temperatures, or as a MIWE back combi
in connection with the MIWE condo. The rounded baking chamber, the
built-in water outlet in the baking chamber floor and the easy to
open external inspection glass make cleaning more comfortable. In
order to carry out maintenance and repair work, the steam unit has
to be removed from the front of the baking chamber.
The
Convection Baking Oven MIWE aeromat is the pioneer among the in-shop
baking ovens. It was presented for the first time at the IBA?1. In
the sixththird generation, the legendary oven is provided with four
baking trays (60 x 40 cm) which makes baking even more comfortable.
The MIWE aeromat satisfies all the special requests of the in-shop
bakeries due its characteristic features, computer control as well
as maintenance and operating convenience.
The heat of the
MIWE aeromat goes deep into the products: Baking of fresh dough
pieces or pre-baked products. Thanks to the "frostling baking"
designed by MIWE, the pre-cooked and frosted dough pieces can be
taken out immediately from the TK cell and baked in the in-shop
bakery. This way, the consumption of fresh baking products in the
in-shop bakery will continue to be a delightful experience. The
baking oven is equipped with two identical steam units (cascade
system) that are integrated in the baking chamber and are located on
the right and the left side of the fan. These steam units offer
optimum baking results. The steam unit loses no heat to the outside
(energy saving) and therefore heats the baking chamber additionally.
A quick temperature rise is also possible after
loading.
Accessories: various options are available for the
base to meet every baking requirement: The MIWE Proofer, MIWE Drying
Chamber, MIWE Underframe and the MIWE Intermediate Shelf. The
integrated controls in the MIWE aeromat are identical with the
controls in the MIWE baking ovens and refrigeration units. The
sophisticated controls MIWE CS and MIWE DS can program four
different speeds of the circulation fan for optimum steam effect and
sensitive baking products. With the control MIWE DS, the operator
can enter 30 baking programs with five baking phases. With the
control MIWE CS, he can even enter 99 baking programs with eight
baking phases. Furthermore, the MIWE CS offers Modem connection to
the MIWE win- CAB and remote monitoring of the baking oven. Both
controls are provided with automatic night startup. Furthermore,
they indicate important baking information and offer data integrity
in case of power failure.
