Characteristics Mobile and Wheel-out High Speed Mixers from KEMPER are suitable for the gentle preparation of many common doughs used in bakeries and cake shops. The KEMPER Elliptical Mixing Process ensures an especially good mixing result with their heavier doughs because of the simultaneous horizontal elliptical movement of the mixing arm, as described, and the bowl rotating in the opposite direction. This process produces a smooth dough with a fine homogeneous structure.
