Pizza Line
Out of the numerous individual machines that form a pizza line let us just
have a closer look at the OSCAR, the filling depositor and the spreading
unit.
For the production of a light and crispy Pizza, a dough band with a good
cell structure is decisive. Using our patented OSCAR zero-stress system,
we obtain just these features. The dough is treated very gently retaining
the gas formed during bulk fermentation.
The Universal filler with special nozzles can deposit the exact amount of
tomato filling in the center of the pizza and the spreading unit spreads the tomato over
the whole surface of the Pizza, leaving just enough room at the edge to give
the Pizza an artisanal look in baking.
